PESTO CAPRESE SALAD
Ingredients:
Mozzarella pearl
Spinach
Roma tomato
Roasted yellow bell pepper
Dairy-free pesto
Balsamic vinegar
Instruction:
In a small saucepan over low heat reduce balsamic vinegar by ¾, stirring constantly ensuring not to burn. Once the balsamic vinegar has thickened, put it aside.
In a small mixing bowl combine pesto and olive oil, then toss in all the other ingredients then place aside.
In a small serving plate smear a small amount of the balsamic reduction at the base of the plate and topped with a sizeable portion of salad and serve

PESTO EGG WHITE PANINI
Ingredients:
1 large multigrain tortilla
3 oz egg white
1 teaspoon pesto
⅛ cup sundried tomatoes
⅛ cup feta cheese
¼ cup arugula
Instructions:
Scramble egg white in a frying pan
Spread pesto lightly on the entire tortilla
Combine scrambled eggs, sun-dried tomatoes, feta cheese, and arugula on the multigrain tortilla.
Tightly fold or wrap the tortilla
Toast on both sides and enjoy!

CHICKEN PITA POCKET
Ingredients:
1 pita bread
1 cooked blackened chicken, shredded
2 tablespoons mayonnaise
1 tablespoon pesto
¼ cup shredded cheese
½ small purple onion, diced
½ small red bell pepper, diced
1 tablespoon caramelized onion
1 tablespoon scallion finely chopped
1 tablespoon tomato, diced
Instruction:
In a small bowl combine mayonnaise and pesto
Slice pita bread in half, fill with shredded blackened chicken breast, top with cheese, onion, tomato, pesto aioli, caramelized onion, and scallion
