PESTO EGG WHITE PANINI

Ingredients:

  • 1 large multigrain tortilla
  • 3 oz egg white
  • 1 teaspoon pesto
  • ⅛ cup sundried tomatoes
  • ⅛ cup feta cheese
  • ¼ cup arugula 

Instructions:

  1. Scramble egg white in a frying pan
  2. Spread pesto lightly on the entire tortilla
  3. Combine scrambled eggs, sun-dried tomatoes, feta cheese, and arugula on the multigrain tortilla. 
  4. Tightly fold or wrap the tortilla 
  5. Toast on both sides and enjoy!
