GOURMET BLACKENED CHICKEN BURGER

Ingredients:


  • 2 tablespoons herb butter
  • 4 ciabatta buns
  • 2 unseasoned chicken burger patty
  • 3 tablespoons blackening spice
  • 2 tablespoons oil
  • 1 oz mixed greens 
  • 2 oz shaved cucumber 
  • 1 roma tomato, sliced thinly 
  • 1 small purple onion, sliced thinly
  • 4 tablespoons mayonnaise 
  • 2 tablespoons pesto

Instructions:

  1. Melt butter in a cast-iron skillet over medium heat. Toast burger buns 
  2. Season chicken patties with Blackening Spice 
  3. In a cast-iron skillet over medium to high heat, sear burger patties for two minutes on each side. Lower the heat and continue cooking until the patty is cooked through ( an additional four to five minutes) 
  4. In a small bowl, combine mayonnaise and pesto to make the aioli. 
  5. Assemble burgers with buns, aioli, lettuce, chicken patty, sliced onions, tomatoes, and shaved cucumber. 
  6. Serve immediately
