Ingredients:
- Mozzarella pearl
- Spinach
- Roma tomato
- Roasted yellow bell pepper
- Dairy-free pesto
- Balsamic vinegar
Instruction:
- In a small saucepan over low heat reduce balsamic vinegar by ¾, stirring constantly ensuring not to burn. Once the balsamic vinegar has thickened, put it aside.
- In a small mixing bowl combine pesto and olive oil, then toss in all the other ingredients then place aside.
- In a small serving plate smear a small amount of the balsamic reduction at the base of the plate and topped with a sizeable portion of salad and serve
