PESTO CAPRESE SALAD

Ingredients:

  • Mozzarella pearl
  • Spinach
  • Roma tomato
  • Roasted yellow bell pepper
  • Dairy-free pesto
  • Balsamic vinegar

Instruction:

  1. In a small saucepan over low heat reduce balsamic vinegar by ¾, stirring constantly ensuring not to burn. Once the balsamic vinegar has thickened, put it aside.
  2. In a small mixing bowl combine pesto and olive oil, then toss in all the other ingredients then place aside.
  3. In a small serving plate smear a small amount of the balsamic reduction at the base of the plate and topped with a sizeable portion of salad and serve
