Ingredients:
1 Hot dog bun
1 Bad Dawg Sausage
1 tablespoon herb butter (room temperature)
Salsa Components:
1 tablespoon diced cucumber
1 tablespoon diced onion
1 tablespoon red and yellow bell pepper
1 tablespoon diced tomato (de-seeded)
2teaspoons chopped escallion (greens)
1 tablespoon passion fruit vinaigrette
Pesto Aioli:
3 tablespoons mayonnaise
1 tablespoon spicy basil pesto
Instructions:
- Cut bread halfway through and butter with herb butter and toast in a preheated griddled cast-iron skillet over medium heat until bread is toasted, remove and place aside.
- In a griddled cast-iron skillet over high heat, grill sausage until thoroughly cooked and only turning once grill marks are imparted on the sausage. Once the sausage is cooked, place aside.
- In a small mixing bowl combine pesto and mayonnaise. Place aside.
- Assemble hot dog by coating inside of bun with pesto aioli, insert sausage, drizzle sausage with small amount of the aioli and topped with salsa, garnish with some chopped scallion and served
